In Good Spirits

RE:FIND Distillery is crafting artisan spirits from grape/grain to glass in the heart of Paso Robles wine country. Proprietors and Distillers, Alex & Monica Villicana, believe in the authenticity of the ingredients distilled, and transparency in the distilling process. In doing so, what was once a conversation on the amount of times a spirit is distilled and filtered is now a discussion on the quality of the ingredients and fermentation and what each brings to the final product. RE:FIND Distillery stands tall among craft distillers committed to crafting their spirits from fermentation to bottle.
RE:FIND Distillery was derived from the Villicana's desire to be more sustainable in their winery (Villicana Winery) practices by utilizing premium resources that are unfortunately unused or discarded. RE:FIND Distillery was founded on the concept of using the prized saignée (free-run juice) that boutique wineries begrudgingly discard and fermenting and distilling it. This practice allows RE:FIND to reclaim approximately 60-acres of premium Paso Robles wine grapes each year through their distillery. That's a lot of water, fuel, and manpower being repurposed into a premium spirit.
RE:FIND Distillery firmly believes in honesty, authenticity, and transparency in their distilling practices. RE:FIND is dedicated to California family farmers, artisan brewers, and boutique vintners by obtaining and highlighting their labors of love and crafting them into well-balanced, full flavored spirits with lots of layering and a distinct finish. Starting with high quality, unprocessed, seasonally sourced natural ingredients, and paying close attention to their stills, the distillers of RE:FIND are able to bottle their spirits unfiltered. After all, if the spirits are derived from high quality materials, go through a clean fermentation, and use only the ethyl alcohol, they shouldn't have to be filtered!

Drunken Cucumber


Ingredients:
  • ½ oz. Fresh Squeezed Lime Juice
  • ½ oz. Simple Syrup
  • 1½ oz. Re:Find Cucumber Flavored Vodka
  • ¾ oz. Pineapple Juice
  • Garnish with mint & cucumber slice
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a cocktail glass. Garnish with mint and slice of cucumber.

Re:Find Cucumber Thyme


Ingredients:
  • 1 oz. Fresh Watermelon Juice
  • ½ oz. Fresh Lemon Juice
  • ½ oz. Thyme Simple Syrup
  • 1½ oz. Re:Find Cucumber Flavored Vodka
  • ¾ oz. Dry Vermouth
Directions:
Combine all ingredients in shaker with ice and shake or stir.

Dill_icious


Ingredients:
  • 1½ oz. YES Dill Simple Syrup
  • 3 oz. Re:Find Cucumber Flavored Vodka
  • Fever Tree Club Soda
Directions:
Combine vodka and simple syrup into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Top the shaker with a splash of club soda and stir briefly. Pour into a chilled martini glass or over ice and garnish with fresh dill.

Cool as a Cucumber


Ingredients:
  • 1½ oz. Re:Find Cucumber Flavored Vodka
  • 4 oz. Root Elixir Cucumber Elderflower Soda*
Directions:

Scarlett Kiss


Ingredients:
  • ¾ Fresh Lemon Juice
  • ¾ oz. Aperol
  • ¾ oz. Creme de Cassis
  • ¾ oz. Re:Find Cucumber Flavored Vodka
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a Collins glass filled with ice. Garnish with lemon shock.

The Blackberry Bees Knees


Ingredients:
  • 1 Egg White
  • 1½ oz. Re:Find Cucumber Flavored Vodka
  • ¾ oz. Fresh Squeezed Lemon Juice
  • ¾ oz. Honey
  • 5 Blackberries
Directions:
Muddle blackberries in the bottom of a shaker, then dry shake. Add the remaining ingredients in the the shaker along with ice. Shake until chilled. Fine strain. Serve up with a blackberry garnish.

Juliet & Romeo


Ingredients:
  • Pinch of Salt
  • ½ oz Simple Syrup
  • ½ oz. Re:Find Cucumber Flavored Vodka
  • 1½ oz Re:Find Gin
  • 3 Mint Leaves (1 for the garnish)
  • ¾ oz. Fresh Lime Juice
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a coupe glass and garnish with mint leaf.

White Linen


Ingredients:
  • ¼ oz. Simple Syrup
  • 1½ oz. Re:Find Cucumber Flavored Vodka
  • ¾ oz. Fresh Lemon Juice
  • ¾ oz. St. Germain
  • Lime or cucumber garnish
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a Collins glass ¾ filled with ice. Garnish with a cucumber slice or fresh shock of lime.

Weekend at Monica's


Ingredients:
  • ½ oz. Dolin Dry Vermouth
  • ¼ oz. Maraschino Liqueur
  • ¼ oz. Simple Syrup
  • 1½ oz. Re:Find Cucumber Flavored Vodka
  • 3 dashes Cecil & Merl Apricot Bitters
  • ¾ oz. Lemon Juice
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain.

Fireside


Ingredients:
  • 1 oz. YES Charred Oak & Maple Syrup
  • 3-4 oz. Re:Find [e] Vodka Finished in Barrel
Directions:
Combine both ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a snifter glass and add several ice cubes or a large ice sphere/cube.

Ward [E]ight


Ingredients:
  • 0.25 oz. Re:Find Kumquat Liqueur
  • 0.5 oz. Fresh Squeezed Orange Juice
  • 0.5 oz. Jack Rudy Grenadine
  • 2 oz. Re:Find [e] Vodka Finished in Barrel
  • Optional: 2 dashes Jack Rudy Aromatic Bitters
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a glass and garnish with an orange peel or pomegranate seeds.

Thai One On


Ingredients:
  • 1 oz. Re:Find [e] Vodka Finished in Barrel
  • 1 teaspoon Charred Pineapple
  • ½ oz. Re:Find Kumquat Liqueur
  • 1½ oz. Mandarin Juice
  • 2 Dashes of Apricot Bitters (Cecil & Merl Brand)
  • ¾ oz. Lemon Juice
  • ¾ oz. Thai Chili Syrup (see below)
Directions:
Pineapple Juice: Cut the skin off a pineapple and grill for 10 minutes Puree the grilled pineapple and set aside Thai Simple Syrup: Combine 2 cups sugar and 1 cup water into a pot and cook in the stove over low heat for 20 minutes. Add 6 Thai chilis. Let the sugar dissolve and cool to room temperature. This can be stored in the refrigerator for up to 10 days. Apple Spic[e]


Ingredients:
  • 1 oz. Fresh Lemon Juice
  • 1 oz. Liquid Alchemist Apple Spice Syrup
  • 2 oz. Re:Find [e] Vodka Finished in Barrel
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Garnish with apple slice and enjoy!

No Thyme to Say Hello


Ingredients:
  • 1 oz Fresh Carrot Juice
  • 1 oz Fresh Squeezed Cara Cara Oranges
  • 1 oz Rose Tea Simple Syrup
  • ½ oz Re:Find Kumquat Liqueur
  • ¼ oz Suze
  • ¼ Passion Fruit Puree
  • 1¼ oz Re:Find Gin
  • Top with a sprig of Thyme
Directions:
Combine 1 cup of sugar & 1 cup of water in a pot and place on medium heat for 15 minutes until dissolved. Take off heat and steep 1 tea bag of Rose tea (or rose petals) into simple syrup for 15 minutes. Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a bucket glass & top with thyme.

Red Velvet


Ingredients:
  • 0.75 oz. fresh lemon juice
  • 0.75 oz. Jack Rudy Grenadine
  • 2 oz RE:FIND Gin
  • 6 drops Jack Rudy Bitters
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a cocktail glass with or without ice.

Smartie Pants


Ingredients:
  • 2 oz RE:FIND Gin
  • 2 oz. Bittermilk Tom Collins Mix
  • 2 oz. soda water
  • Optional: 0.25 oz. RE:FIND Kumquat Liqueur
Directions:
Combine ingredients into a tall glass (referred to as a Collins glass) filled with ice and stir.

Gimlet with Cucumber


Ingredients:
  • 0.5 oz. RE:FIND Cucumber Flavored Vodka
  • 0.5 oz. YES Honey Simple Syrup
  • 0.75 oz. fresh lime juice
  • 1.5 oz. RE:FIND Gin
  • 3 mint leaves (1 for the garnish)
  • Pinch salt
Directions:
Combine ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a coupe glass and garnish with mint leaf.

RE:FIND SLO Harvest


Ingredients:
  • (2 parts honey, 2 parts water, 1 part sugar)
  • 0.5 oz. fresh lemon juice
  • 0.5 oz. lavender honey simple syrup
  • 1.75 oz. RE:FIND Gin
  • 2 strawberries
Directions:
Muddle strawberries. Add remaining ingredients, ice, shake, strain, and serve. Garnish with strawberry.

RE:FIND Spring Fever


Ingredients:
  • 1 tsp. lemon juice & 2 lemon wheels
  • 1.5 oz. RE:FIND Gin
  • 2 dashes Peychaud’s bitters
  • 3 oz. Fever Tree Tonic
  • 4 mint leaves
Directions:
In Collins glass, muddle lemon wheels with lemon juice, mint, and bitters. Add gin, tonic, and ice.

RE:FIND Farmstand


Ingredients:
  • 0.5 oz. fresh lemon juice
  • 1 oz. fresh melon juice
  • 1.5 oz. RE:FIND Gin
  • 2 oz. fresh apple cider
  • Mint
  • Splash of Fever Tree Tonic
Directions:
Muddle mint in the bottom of a shaker. Add gin, cider, melon and lemon juice, and ice and shake. Top the shaker with a splash of tonic and serve. Garnish with mint.

RE:FIND Negroni


Ingredients:
  • 1 part Aperol
  • 1 part RE:FIND Gin
  • 1 part Vya Sweet Vermouth
  • Ice
  • Orange Peel
Directions:
Place all ingredients into a shaker filled with ice and stir until fully chilled. Pour into an old fashion glass over ice, garnish with orange peel, and serve.

RE:FIND Plum Sour


Ingredients:
  • 0.5 oz. lemon juice
  • 0.5 oz. simple syrup
  • 1 oz. Re:Find Gin
  • 2 dashes Plum Bitters
  • Float of Villicana Red Wine
Directions:
Combine the first four ingredients and then strain. Pour into double old fashion glass with ice and float the wine. Garnish with lemon peel.

Roquette


Ingredients:
  • 0.75 oz. agave syrup (1:1 water to agave)
  • 0.75 oz. fresh lime juice
  • 2 oz. RE:FIND Gin
  • Handful arugula
Directions:
Muddle everything except for the gin, then add gin and ice to shaker. Shake and strain over ice.

Gin & Ginger


Ingredients:
  • 0.5 oz. fresh lemon/lime juice
  • 1 oz. RE:FIND Gin
  • 5 oz. Fever Tree Ginger Beer
  • Garnish with lime
  • Option: Cilantro leaves
Directions:
Option: Muddle 6-8 fresh cilantro leaves in bottom of glass. Add ice and stir in the rest of the ingredients. Enjoy!

Classic Martinez


Ingredients:
  • 0.75 oz. Vya Sweet Vermouth
  • 1.5 oz. RE:FIND Gin
  • 2 dashes Luxardo Maraschino Liqueur
  • 2 dashes Orange Bitters
Directions:
Combine all ingredients into a shaker filled with ice and stir gently until cold. Strain into a chilled cocktail glass. Garnish with a fresh shock of lemon peel.

Ingredients:

Ingredients:
  • 1 oz. Sweet Vermouth (Carpano Antica Formula or Cinzana 1757)
  • 2 dashed Angostura Bitters

Ingredients:
  • 0.5 oz. fresh lime juice
  • 2 oz RE:FIND Vodka
  • 5 oz. tonic water
Directions:
Pour all of the ingredients into a cocktail glass filled with ice and stir. Garnish with lime, mint, or both. NOTE: We highly recommend you use a high quality tonic water because the drink is primarily tonic. Our suggestion is Fever Tree or Jack Rudy Tonic. Do not use tonic syrup.

Lemondrop


Ingredients:
  • 0.25 oz. simple syrup
  • 0.75 oz. fresh lemon juice
  • 1.5 oz. RE:FIND Vodka
Directions:
Combine all of the ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Strain into a rocks glass over fresh ice and garnish.

La Diabla


Ingredients:
  • 0.5 oz. Crème de Cassis
  • 0.75 oz. fresh lime juice
  • 1.5 oz. RE:FIND Vodka
  • Ginger beer
Directions:
Combine first three ingredients into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Pour into a chilled glass and top with ginger beer.

RE:FIND Apple Spice Martini


Ingredients:
  • 1 oz. ginger beer
  • 2 oz. apple cider
  • 2 oz. RE:FIND Vodka
  • Cinnamon sugar & cinnamon stick (garnish)
Directions:
Combine RE:FIND Vodka with apple cider into a cocktail shaker filled with ice. Shake vigorously for 10 seconds. Add ginger beer, shake lightly. Rim chilled martini glass with cinnamon sugar. Strain vodka, cider & ginger beer into martini glass.

Ingredients:
  • 0.25 oz. drambuie
  • 0.25 oz. fresh squeezed orange juice
  • 1 oz. RE:FIND Vodka
Directions:

Raspberry Lemonade


Ingredients:
  • 1 oz. Fresh Lemon Juice
