Owners and Barnard residents Peter Jillson and Anne Marie Delaney began SILO in 2013, with the belief that in utilizing Vermont’s naturally rich bounty they could provide a wonderful vodka for people looking for a local option. ‘I always knew I wanted to be back in Vermont. It’s where my family comes from, through eight generations. This is a place where handcrafted is a way of life, so why not a premium Vodka for vodka-lovers? I mean, a true craft product, made from start to finish right here in Vermont, by Vermonters.’
SILO’s distillers produce high quality spirits, start to finish, using premium local ingredients. Their process is completely hands on, starting with grain selection from Grembowicz Farm in North Clarendon, Vermont. The grain is fed by hand into a hammer mill, then it travels into the mash tun, where it is cooked and cooled over a six hour period to create SILO Distillery’s mash. Yeast and enzymes are added and the mash is transferred to a tank where it will ferment and turn into an oatmeal-like porridge of grain and water.
Located in Windsor, Vermont, in the same Artisan Park area as Harpoon Brewery, Simon Pearce, Vermont Farmstead Cheese, and Great River Outfitters, SILO is situated in a newly built barn distillery. The space is uniquely designed to support sustainable production as well as offer the public a full tour, tasting and cocktail experience, inside and out. Sustainability is part of their process; recycling the water used throughout distillation, and sending spent grains to farmers to use for feed. The two-story building is rich with the smells of pine and cooking grains, offering beautiful acoustics for local musicians against a backdrop of the stainless steel and copper of SILO’s custom German distillation equipment. Their tall column produces vodka and their short column produces more flavorful spirits such as whiskey, brandy, and Solstice. Everything is done right in their barn distillery. The team is the heart of SILO. There are 3 stages of spirit collection, called cuts: heads, hearts, and tails. At SILO, they’re all hearts, all day.

Harvest Mule


Ingredients:
  • 1 oz. lemon juice
  • 1.5 oz. SILO Vodka
  • 3 oz. apple cider
  • 3 oz. ginger beer
Directions:
Add all ingredients to a glass or copper mug filled with ice. Stir gently. Garnish with cinnamon stick; apple, lemon or orange slice.

SILO Sunset


Ingredients:
  • 0.5 oz. triple sec
  • 1 oz. Element pineapple turmeric shrub
  • 2 oz. SILO Vodka
  • Orange garnish
Directions:
Combine ingredients in a shaker with ice. Shake hard. Strain into a cocktail glass, serve up. Garnish with orange peel.

Royalty is Overrated


Ingredients:
  • 0.5 oz. triple sec
  • 1 oz. Chambord, chilled
  • 1 oz. SILO Vodka
  • Black raspberry garnish
  • Dram black bitters
  • Lemonade
Directions:
Shake vodka, triple sec, and lemonade with ice. Strain into a martini glass. Pour the chilled Chambord down the side of the glass so it settles at the bottom. Add a dash of bitters and garnish with black raspberry.

SILO Bloody Mary


Ingredients:
  • 0.25 tsp. garlic powder
  • 0.5 tsp. coarse black pepper
  • 0.75 tsp. celery salt
  • 0.75 tsp. tabasco sauce
  • 1 cup Vermont Pickle 'Hot Dills' juice
  • 1 tbsp. prepared horseradish
  • 1.5 tbsp. Worcestershire sauce
  • 3 cups tomato juice
  • 3 tbsp. lemon juice
  • 3 tbsp. lime juice
  • SILO Cucumber Vodka
Directions:
Blend all ingredients together. Transfer to container, and place in refrigerator. Let sit for one day.

Summer's End


Ingredients:
  • 0.5 oz. Dry Vermouth
  • 0.75 oz. SILO Cucumber Vodka
  • Alice and the Magician 'Citrus Blossom Harvest'
  • Citizen Cider Brose
  • Sprig of Lemon Balm
Directions:
Clap the Lemon Balm in your hand to release the oils of the herb. Place in rocks glass with ice. Add all ingredients, top with cider. Spritz with 'Citrus Blossom Harvest' aromatic.

Cucumber Summer


Ingredients:
  • 0.5 oz. cucumber-lime simple syrup
  • 1 oz. Cointreau
  • 1 oz. lime juice
  • 2 oz. SILO Cucumber Vodka
Directions:
Shake hard with ice, and strain into your favorite glass.

House Margarita


Ingredients:
  • 1 oz. Cointreau
  • 1 oz. lime juice
  • 2 oz. SILO Solstice or SILO Cucumber Vodka
Directions:
Shake with ice and strain into a cocktail glass. Garnish with salt and a lime wheel.

Celtic Seabreeze


Ingredients:
  • 1 oz. simple syrup
  • 2 oz. lime juice
  • 2 oz. SILO Cucumber Vodka
  • Basil
  • Club soda
  • Garnish with lime peel
  • Mint
Directions:
Add lime juice, syrup, vodka and basil into shaker with ice, shake well. Strain and pour into highball glass with ice. Splash of club, garnish with mint and lime peel.

Queen of Thorns


Ingredients:
  • 0.5 oz. honey simple syrup
  • 1 oz. cardamaro
  • 1.5 oz. SILO Cucumber Vodka
  • 2 kumquats
  • Couple dashes of cranberry bitters
  • Soda water
Directions:
Muddle kumquats and simple syrup. Add all ingredients and shake well. Strain over ice into a collins glass. Top with soda water. Serve with a straw.

Citrus Sunshine


Ingredients:
  • 2 oz. SILO Lavender Vodka
  • 6 oz. Grapefruit Juice
  • A splash of Grenadine
  • A splash of Lemon Juice
Directions:
Mix together the grapefuit, vodka and lemon juice. Pour over ice & add grenadine. Garnish with rosemary sprig, grapefruit or lemon slice.

SILO Lavender Lemon


Ingredients:
  • .5 oz. triple sec
  • 1 oz. fresh lemon juice
  • 1 oz. simple syrup
  • 2 oz. SILO Lavender, Lemon, or Cucumber Vodka
Directions:
Combine all ingredients in shaker with ice. Shake hard and serve up with a sugared rim.

Lavender Collins


Ingredients:
  • 0.5 oz. honey
  • 1 oz. lemon juice
  • 2 oz. SILO Lavender Vodka
  • Soda water
Directions:
Shake first three ingredients with ice, pour into your favorite glass on the rocks. Top with soda water and enjoy.

Cucumber Vesper


Ingredients:
  • 1 oz. lillet
  • 1 oz. SILO Cucumber Vodka
  • 3 oz. SILO Gin
  • Lemon zest garnish
Directions:
Shake ingredients with ice for 10 seconds. Strain into a chilled cocktail glass. Squeeze zest over drink.

Gin & Jam


Ingredients:
  • 0.5 oz. fresh lemon juice
  • 1 tbsp. your favorite berry jam
  • 2 oz. SILO Gin
  • Tonic
Directions:
Shake ingredients with ice. Pour into a tall glass. Top with tonic.

Fall in Vermont


Ingredients:
  • 0.5 oz. lemon juice
  • 2 oz. SILO Maple Whiskey
  • Splash of seltzer water
Directions:
Add all ingredients to glass with large ice cube. Top with seltzer water.

Maple Old Fashioned


Ingredients:
  • 2 oz. SILO Maple Whiskey
  • Bitters
  • Orange wheel & cherry
  • Splash of club soda
Directions:
In an Old Fashioned glass, muddle the bitters, orange wheel, cherry and a splash of soda. Remove the orange rind, add the bourbon and fill with ice. Garnish with a fresh orange wheel and cherry.

Maple Manhattan


Ingredients:
  • 0.25 oz. sweet vermouth
  • 2 oz. SILO Maple Whiskey
  • Dash of Angostura Bitters
Directions:
Add all the ingredients to a mixing glass filled with ice and stir. Strain into a chilled glass, and garnish with a cherry. Top with cherry.

Maple Manhattan


Ingredients:
  • 0.75 oz. maple liqueur
  • 2 oz. SILO Whiskey
  • SILO infused cherries, plus juice
Directions:
Combine all ingredients, except cherries. Stir with ice. Garnish with cherry.

Windsor Times


Ingredients:
  • 0.33 oz. dry curacao
  • 1.5 oz. dry vermouth
  • 1.5 oz. SILO Whiskey
  • 2 dashes Angostura Bitters
  • 2 dashes Peychaud's Bitters
  • Lemon twist
Directions:
Stir ingredients with ice. Strain into rocks or cocktail glass. Garnish with lemon twist.

East of Toronto


Ingredients:
  • 0.5 oz. simple syrup
  • 0.5 oz. Zucca (rhubarb amaro)
  • 2 dashes rhubarb bitters
  • 2 oz. SILO Whiskey
  • Orange twist
Directions:
Stir ingredients with ice. Strain into rocks or cocktail glass. Garnish with orange twist.

Irish Buck


Ingredients:
  • .5 oz. fresh lime juice
  • 2 oz. SILO Whiskey
  • 3 oz. ginger ale
Directions:
Fill glass with large ice cube. Fill with SILO Whiskey, lime juice and Ginger Ale. Stir and garnish with a lime wedge.
