In northern New York on the water-ways of the Thousand Islands is Clayton Distillery, the region’s first micro-distillery. They have been distilling a full line of fine craft spirits with locally grown fruits and grains since they first opened their doors in 2013.
Clayton Distillery was founded by Mike Aubertine, Roger Howard and Mike Ingerson after Mike Aubertine sold most of his interest in the architecture firm he founded. They broke ground for their sustainability-minded distillery in July 2012 and charged through until their doors opened in April 2013. They spent their first summer as meticulous students of the distillation process, refusing to stop learning until they got it right.
Get it right they did. The secret? All of their craft spirits start at the 400-acre, fifth generation Aubertine Farms where founder Mike Aubertine grew up. An active dairy farm until 2006, they now grow corn, rye and alfalfa. If they don’t grow it, it’s sourced from other New York producers, giving their products N.Y. freshness you can taste.

Admiral's Raspberry Lemonade


Ingredients:
  • 0.5 oz. Limoncello
  • 1 oz. Admiral’s Berry Vodka
  • 4 oz. Simply Lemonade
  • Fresh Lemon Slices and Raspberries (for garnish)
  • Splash Raspberry Liqueur
Directions:
Combine all ingredients in a Clayton Distillery 16oz Tervis glass and stir. Garnish with lemon and raspberry.

Apple Freighter


Ingredients:
  • 2 oz. Cranberry Juice
  • 1.5 oz. Apple Pie Shine 101
  • 4 oz. Ginger Ale
  • Lime Slice (for garnish)
Directions:
Add ice to a Clayton Distillery 16oz Hooch Jar. Add next three ingredients and stir lightly. Garnish with fresh lime.

The Cherry Islander


Ingredients:
  • 0.5 oz. Grenadine
  • 1 oz. Flagship Vodka
  • 2 oz. Cherry Shine 5050
  • 2 oz. Unsweetened Ice Tea
  • Maraschino Cherries (for garnish)
Directions:
Combine all ingredients in a Clayton Distillery 14oz rocks glass filled with ice. Stir and garnish with cherries.

The Cruiser


Ingredients:
  • 3 oz. Ginger Ale
  • 0.75 oz. Cherry Shine 5050
  • 0.75 oz. NY Straight Bourbon
  • Maraschino Cherry (for garnish)
Directions:
Fill a Clayton Distillery 9oz square rocks glass with ice. Add remaining ingredients and stir. Garnish with maraschino cherry.

Wave Runner


Ingredients:
  • 0.5 oz. Blue Curaçao
  • Maraschino Cherries (for garnish)
  • 1 oz. Sweet & Sour mix
  • 1 oz. Two Dog Moonshine
  • 6 oz. Lemon-Lime Soda
Directions:
Combine all ingredients in a Clayton Distillery 16oz hooch jar filled with ice. Stir and garnish with maraschino cherries.

Overboard Orange Wonder


Ingredients:
  • Whipped cream
  • 2 oz. half and half
  • 1 oz. Flagship Vodka
  • 1 oz. Orangecello
  • ½ bottle Stewart’s Orange ‘n Cream Soda
  • Twisted Orange Zest (for garnish)
Directions:
Shake first four ingredients vigorously in a cocktail shaker filled with ice. The color of the drink will be a creamy, cloudy, orange wonder. Pour into a Martini Glass, add whipped cream and garnish with zest.

Overhaul Orange Mimosa


Ingredients:
  • 0.5 oz. Orangecello
  • 0.75 oz. Flagship Vodka
  • 1 oz. Simply Orange Juice
  • 4 oz. Cold Champagne or sparkling wine
  • Orange Zest (for garnish)
Directions:
Mix the vodka, Orangecello, orange juice and champagne in a champagne flute, stir lightly. Garnish with orange zest.

Raspberry Regatta Lemonade


Ingredients:
  • 1 oz. Raspberry Liqueur
  • 1 oz. Club soda
  • 4 oz. Simply Lemonade
  • 1 oz. Flagship Vodka
  • Fresh Lime Wedge (for garnish)
Directions:
Fill a Clayton Distillery 16oz Tervis cup with ice. Pour in Raspberry Liqueur, vodka, lemonade, club soda and stir lightly. Garnish with fresh lime.

Rhubarbe Clipper Cosmo


Ingredients:
  • 1 oz. Triple Sec
  • 1 oz. Flagship Vodka
  • 1 Muddled Strawberry
  • 3 oz. Rhubarbe Fraise Liqueur
  • Sliced Strawberry (for garnish)
Directions:
Muddle strawberry on the bottom of a Martini glass. Combine vodka, Rhubarbe Fraise, Triple Sec and ice in a cocktail shaker and shake well. Strain into martini glass and garnish with fresh strawberry.

The Berry Beach


Ingredients:
  • 1 oz. Flagship Vodka
  • 2 oz. Raspberry Liqueur
  • 3 oz. Unsweetened Ice Tea
  • 6 Blackberries
Directions:
Muddle 4 blackberries in bottom of a Clayton Distillery 14oz rocks glass. Add ice, vodka, liqueur, and tea. Stir and garnish with remaining blackberries.

Scuttlebutt Tea


Ingredients:
  • 1.5 oz. Limoncello
  • 1.5 oz. Lemonade Shine 5050
  • 4 oz. Unsweetened Ice Tea
  • Fresh Lemon Slices (for garnish)
Directions:
In a Clayton Distillery 16oz Tervis glass, combine all ingredients and stir well. Garnish with lemon slices.

Land Lubber Limoncello


Ingredients:
  • 2 oz. ginger ale
  • 2 oz. Cranberry Juice
  • 1.5 oz. Limoncello
  • Fresh Lemon Slices (for garnish)
Directions:
Fill a cocktail shaker with ice. Add the Limoncello, cranberry juice, ginger ale and shake well. Pour into a Martini glass filled with ice. Garnish with lemon.

Lemon Launch Martini


Ingredients:
  • 1.5 oz. Limoncello
  • Fresh Lemon Slices (for garnish)
  • 1 tsp Sugar
  • 1.5 oz. Flagship Vodka
  • 2 oz. Sweet & Sour mix
Directions:
Combine vodka, Limoncello and sweet & sour mix in a cocktail shaker filled with ice and shake well. Swirl lemon around the rim of a Martini glass and dip rim in sugar. Strain mix into Martini glass and garnish with fresh lemon slice.

Longboat Lemonade


Ingredients:
  • 1 oz. Limoncello
  • 0.5 oz. Club Soda
  • 0.5 oz. Cranberry Juice
  • 3 oz. Simply Lemonade
  • Lemon Wedge (for garnish)
Directions:
Add all ingredients except soda to a shaker filled with ice. Shake vigorously and strain into a Clayton Distillery 14oz rocks glass filled with ice. Add soda and garnish with lemon.

Maritime Gin


Ingredients:
  • Fresh Lemon Slices (for garnish)
  • 0.75 oz. Limoncello
  • 1 oz. Shoal Finder Gin
  • 5 oz. Sprite
Directions:
Combine all ingredients in a Clayton Distillery 14oz rocks glass and stir. Garnish with lemon slices.

Breakwater


Ingredients:
  • 1 oz. fresh lemon juice
  • 1 oz. Amaretto
  • Maraschino Cherries (for garnish)
  • 2 oz. NY Straight Bourbon
Directions:
Fill a cocktail shaker with ice. Add the bourbon, amaretto and lemon juice and shake well. Strain into a Clayton Distillery 9oz square rocks glass filled with ice and garnish with cherries.

Outboard Orange Cosmo


Ingredients:
  • 1 oz. Cranberry Juice
  • 1 oz. Orangecello
  • Orange Zest (for garnish)
  • 2 oz. Flagship Vodka
Directions:
Combine vodka, orangecello and cranberry juice in a cocktail shaker filled with ice. Shake well and pour into a Martini glass. Garnish with orange zest.

Island Breeze


Ingredients:
  • Club soda
  • 1 oz. Fresh Lime Juice
  • 1 oz. Triple Sec
  • 1 oz. Raspberry Liqueur
  • 1 oz. Flagship Vodka
  • 2 oz. Pineapple Juice
  • Fresh Lime Slices (for garnish)
Directions:
Add ice to a Clayton Distillery 14 oz rocks glass. Combine next 6 ingredients. Stir gently and garnish with fresh lime.

Royal Raspberry Punch


Ingredients:
  • 1 oz. Cranberry Juice
  • 1 oz. Raspberry Liqueur
  • 4 oz. Cold Champagne or sparkling wine
  • Raspberries and/or Blackberries (for garnish)
Directions:
Add Raspberry Liqueur, cranberry juice and champagne to a Martini glass and stir lightly. Add fresh raspberries and/or blackberries.

St. Lawrence Sunrise


Ingredients:
  • 1 oz. Raspberry Liqueur
  • 1 Orange
  • 4 oz. Sparkling White Wine or champagne, chilled
  • Fresh Raspberries (for garnish)
Directions:
Combine liqueur, wine or champagne and the juice of two fresh orange wedges in a fluted champagne glass. Garnish with an orange slice and fresh raspberries. Add ice if you like.

Captain Collins


Ingredients:
  • Lemon Wedge (for garnish)
  • 1.5 oz. Rhubarbe Fraise Liqueur
  • 1.5 oz. Shoal Finder Gin
  • 2 oz. Club Soda
Directions:
Fill a Clayton Distillery 9oz square rocks glass with ice. Add gin, Rhubarbe Fraise, club soda and stir gently. Garnish with fresh lemon.

Buoy Tipper


Ingredients:
  • 3 oz. Sprite
  • 0.75 oz. Flagship Vodka
  • 0.75 oz. Orange Juice
  • 0.75 oz. Pineapple Juice
  • 0.75 oz. Shoal Finder Gin
  • 1 oz. Coconut mix
  • Orange Slice (for garnish)
Directions:
In a cocktail shaker combine ice and next five ingredients. Shake vigorously and pour into a Clayton Distillery 16oz Tervis glass filled with ice. Add Sprite and stir lightly. Garnish with fresh orange slice.

Port of Call


Ingredients:
  • 3 oz. Pineapple Juice
  • Splash of club soda
  • 0.5 oz. Blue Curaçao
  • 1.5 oz. Shoal Finder Gin
  • 1.5 oz. Sweet & Sour mix

The First Mate


Ingredients:
  • 2 oz. ginger ale
  • 1.5 oz. Shoal Finder Gin
  • 1 oz. Simply Lemonade

Fill a Clayton Distillery 9oz rocks glass with ice. Add gin, lemonade, ginger ale and stir lightly. Add lemon for garnish.

Thousand Island Iced Tea


Ingredients:
  • 1 oz. Triple Sec
  • 1 oz. Limoncello
  • Fresh Lemon Slices (for garnish)
  • 0.5 oz. Flagship Vodka
  • 0.5 oz. Rum
  • 0.5 oz. Shoal Finder Gin
  • 0.5 oz. Tequila
  • ½-1 tsp Sugar
  • Unsweetened cold tea to top off the glass
Directions:
In a Clayton Distillery 16 oz. Tervis glass , combine all ingredients with ice and stir well. Garnish with lemon slices.

Ingredients:
  • 1 oz. Peach Schnapps
  • 3 oz. Cranberry juice
  • 1.5 oz. Two Dog Moonshine
  • 3 oz. Simply Orange Juice
  • Orange Slices (for garnish)
Directions:
Add ice to Clayton Distillery 16oz Tervis glass. Add moonshine, peach schnapps, orange juice and cranberry juice. Stir and add fresh orange slices.

Beacon's Light


Ingredients:
  • Ice
  • 3 oz. Sprite
  • Lime wedge for garnish
  • 1 oz. Flagship Vodka
  • 1 tsp. lime juice
  • 1 tsp. sugar
  • 4 blackberries
Directions:
Muddle blackberries in bottom of Clayton Distillery 9oz square rocks glass. Add vodka, lime juice, sugar, and stir. Add ice to glass and top off with Sprite. Stir slightly and garnish with lime.
