At Rising Sun Distillery, their mission is to produce the finest hand-crafted Certified Organic distilled spirits and have fun doing it! As a true micro-distillery, they pride themselves on making sure every prepared batch of spirits from grain to glass. This means starting with the best locally sourced Organic produce and grains they can get their hands on, Rocky Mountain ice melt water and producing every bottle with their custom built equipment. While other processes may be easier, Rising Sun Distillery knows doing it this way creates the best quality and consistency for making each and every batch.
Sol and Dawn were working the grind, Sol as a software developer for a large firm and Dawn as a high school social studies teacher. They decided to try their hand at being entrepreneurs and follow in the footsteps of their great grandparents, who were bootleggers and distillers in mining camps. Sol's family made liquor from pears in the Midwest during prohibition and Dawn's great grandfather made his own whiskey while working copper mines in Utah. In 2013 they decided to start the process of opening a craft distillery. After two years of planning and execution they opened the doors to a 1,700 square foot distillery in the shadow of Mile High Stadium in Denver. Ever since they have been producing the highest quality Certified Organic spirits, supporting local farmers who supply their, peaches, lavender, chile and some grains.
Rising Sun Distillery uses very simple distilling methods and they don't get too fussy with their fermentation. Basically they use the highest quality ingredients, let their products ferment naturally without much fuss. They use distilling methods that have been used for thousands of years and take a lot of care to harvest the best tasting hearts and they use the heads and tails for cleaning but not drinking and they put a lot of love into every bottle. The Philosophy of Rising Sun Distillery is to make a high quality product, support their local community and to have fun. What better way to share their craft than to share a drink together.

Gin Bouquet

  • 1.5 oz. Gin
  • 1.5 oz. Lavender Hibiscus Liqueur
  • 3 oz. Grapefruit Juice
Combine ingredients into a shaker with ice. Shake vigorously. Fine strain into a chilled glass and enjoy!


  • 1.5 oz. Colorado Peach Brandy
  • 1 oz. White Creme de Menthe
Shake well; strain into Cocktail glass and serve.
